How to Register for a Class

Registration is easy - sign up for a class today!
Please note: Due to the popularity of Merc classes, we cannot accommodate walk-ins. Everyone must pre-register.

In-Store
There is a self-service class sign-up counter near our book department. Fill out a registration form, put it in the provided envelope along with your class payment and drop it in the drop box - checks or cash only - we cannot accept credit, debit or Merc gift cards for class payment.

By Mail
For your convenience we are happy to accept registrations by mail. Please call the Education Department first to make sure there is still space available. We can be reached at 785-843-8544, Monday through Friday, 8:30 am - 5:30pm.

Include the name of the class you are registering for, a phone number and a check for payment made out to The Merc Classes.

Online
Select the class(es) you want to add to your cart. Fill out the required fields for each participant attending the class. Review your order and fill out your billing information. You may register for multiple classes - simply click "Continue Shopping for More Classes." Once you are done shopping, review our class policies and check the box. Click "I'm Done Shopping - Checkout Now" to complete your order. You will receive an email notification shortly confirming your registration.

It's that easy! Unless a class is marked "FULL," you can assume there is still room. We will call you if we have a question about your registration.


The Nuts & Bolts

  • Classes are limited to 30 participants, unless otherwise noted.
  • Prepayment is required to assure your place in class. We cannot hold class space for those who do not include payment with their class registration.
  • Class registration closes 24 hours prior to class.
  • We will contact you if there is a question about your registration, otherwise you can assume you are in the class.
  • We do not make reminder calls, however please help yourself to a reminder sticker for your calendar, available at the class registration cart.
  • If you must miss a class please give us at least 48 hours notice. We will issue you a credit that may be used for any of our classes in the future.
  • If you don't show for a class and haven't called us 48 hours prior to the class, we will not be able to issue a class credit or refund.
  • Classes will be cancelled if minimum enrollment is not met 48 hours prior to class. Participants will be notified and class credit or full refund will be issued if class is cancelled.
  • Class Gift certificates may be purchased for any amount and are available at the Customer Service Desk or from the Education & Outreach Department.
  • Scholarships are offered to those who need them−please talk to Nancy O'Connor.
  • Material presented in Merc classes reflects the views and opinions of the presenter and is not an endorsement of products sold or philosophies held by the Merc.

The Bakery is Making Personal Sized Pies for Summer!

Yes, you read that right. The Merc Bakery is making personal sized fruit pies to help get you through the glorious days of summer. They are the perfect size to share with your best friend, or just keep it all to yourself! Perfect for a summertime picnic, or with a scoop of vanilla ice cream. The flavors will rotate throughout the summer, but the price will always stay at $4.49!

Rice!

Rice is the perfect summer food - cook ahead and use it to make so many cool dishes. Explore the wide variety of rice in the Merc's Bulk Department to make delicious and nutritious dishes for every meal, including Brown Rice with Nuts and Raisins; Collard Leaf Rice and Bean Wraps made with Brown Mekong Flower and Madagascar Pink Rice. You'll also enjoy the national dish of Bhutan, Ema Datshi (chilies and cheese with Red Rice) and end with Black Sticky Rice Pudding with Coconut. Rice is so nice.

Vegetarian Sushi

7-9pm

It is such fun to make your own sushi, and even easier without the fish. As you munch on steamed Edamame (green soybeans - so delicious) we'll prepare Perfect Sushi Rice and use it to assemble a variety of rolls. You'll sample Shiso Leaf and Umeboshi Plum Roll; Asparagus and Cream Cheese Roll with Omelet; Miso Eggplant Rolls with Tofu; and Spicy Avocado Rolls. Wow! We'll top it all off with a surprise sweet!

It's a Veggie Picnic!

6-7pm

We'll spread out the checked tablecloths and have a picnic in the Classroom - no weather issues and no ants, just great picnic food ideas! You'll enjoy Hilary's Eat Well Veggie Burgers (locally made) served on Farm to Market Buns with all the trimmings. We'll whip up some Festive Cous Cous Salad and Potato Salad with Green Beans & Cukes to round out the picnic, and finish with Tofutti Cuties for dessert. You'll get to take home a package of Hilary's burgers for your own picnic at home. Fun! *This is a mini class.

Let's celebrate the fruits of summer with a fabulous class from Chef Paige featuring her favorite fruit desserts. You will enjoy the loveliest selection of desserts including: Apricot Custard Tart with Almonds; fresh Blueberry Buckle; Raspberry-Rhubarb Streusel Pie; and Peaches Foster with Butter Pecan Ice Cream. We'll put on the tea and coffee and try to keep you anchored in this heavenly class.

Kids Cook a South of the Border Feast

2-3:30pm

Young, budding chefs - join Lily for a fun shopping, cooking, and eating extravaganza at The Merc! We will start with a tour of the store, picking out delicious ingredients for our South of the Border Feast. Next, the class will work together to create Bean, Cheese, and Veggie Quesadillas; Black Bean and Quinoa Salad; and Mango Smoothies. Finally, participants will enjoy their homemade, satisfying meal around a table with new friends. This is a hands-on class for kids only, ages 7-11. *Class size is limited to 14.
