How to Register for a Class

Registration is easy - sign up for a class today!
Please note: Due to the popularity of Merc classes, we cannot accommodate walk-ins. Everyone must pre-register.

In-Store
There is a self-service class sign-up counter near our book department. Fill out a registration form, put it in the provided envelope along with your class payment and drop it in the drop box - checks or cash only - we cannot accept credit, debit or Merc gift cards for class payment.

By Mail
For your convenience we are happy to accept registrations by mail. Please call the Education Department first to make sure there is still space available. We can be reached at 785-843-8544, Monday through Friday, 8:30 am - 5:30pm.

Include the name of the class you are registering for, a phone number and a check for payment made out to The Merc Classes.

Online
Select the class(es) you want to add to your cart. Fill out the required fields for each participant attending the class. Review your order and fill out your billing information. You may register for multiple classes - simply click "Continue Shopping for More Classes." Once you are done shopping, review our class policies and check the box. Click "I'm Done Shopping - Checkout Now" to complete your order. You will receive an email notification shortly confirming your registration.

It's that easy! Unless a class is marked "FULL," you can assume there is still room. We will call you if we have a question about your registration.


The Nuts & Bolts

  • Classes are limited to 30 participants, unless otherwise noted.
  • Prepayment is required to assure your place in class. We cannot hold class space for those who do not include payment with their class registration.
  • Class registration closes 24 hours prior to class.
  • We will contact you if there is a question about your registration, otherwise you can assume you are in the class.
  • We do not make reminder calls, however please help yourself to a reminder sticker for your calendar, available at the class registration cart.
  • If you must miss a class please give us at least 48 hours notice. We will issue you a credit that may be used for any of our classes in the future.
  • If you don't show for a class and haven't called us 48 hours prior to the class, we will not be able to issue a class credit or refund.
  • Classes will be cancelled if minimum enrollment is not met 48 hours prior to class. Participants will be notified and class credit or full refund will be issued if class is cancelled.
  • Class Gift certificates may be purchased for any amount and are available at the Customer Service Desk or from the Education & Outreach Department.
  • Scholarships are offered to those who need them−please talk to Nancy O'Connor.
  • Material presented in Merc classes reflects the views and opinions of the presenter and is not an endorsement of products sold or philosophies held by the Merc.

A Picnic in Paris

Join Chef Paige and be transported to Paris for Le Pique-nique! We'll have the French music on and checked cloths on the tables to set the mood for a memorable evening. Paige will create and you will enjoy Zucchini & Gruyere Tartlets; Basil & Garlic Chicken; Marinated Summer Vegetable Salad; and Minted Farro with Peas & Goat Cheese. For a perfect finish you'll feast on Cherry, Chocolate & Almond Mini Cakes.

Three Dressings-Six Salads

7-9pm

Learn three simple dressings to make six salads. We'll make a Tahini Lemon Dressing to use on Greens with Broccoli, and Lightly Steamed Carrots with Chickpeas; Hollyhock Dressing made with nutritional yeast to dress a Crunchy Romaine, Arugula and Peas Salad, and a Cold Pasta Salad with Baked Tofu; a versatile Citrus Vinaigrette to top Mixed Spring Greens with Mango, and a Fresh and Light Potato Salad. To top it off we'll explore the infinite ways to top a great salad with nuts, seeds and dried fruit.

Six Yummy Summer Smoothies

7-9pm

When the temperature heats up outside nothing goes down easier or tastes better than a cool smoothie. Why pay $5 for a sugary store bought drink when you can make your own at home? We will explore adding nutrient dense ingredients and seasonal ingredients to create six different types of smoothies that will provide nutrition and boost your brain power. Learn to make your own almond milk and coconut milk to add to your smoothies. Holistic Nutrition Coach Karen Duggan will incorporate many wellness tips into this delicious class.

Cheeze!

7-9pm

Come experience delicious "cheeze" - not from cows but plant-based, cholesterol-free alternatives, using creative combinations of whole foods to satisfy your family and amaze your guests. We'll demonstrate how to make three different sliceable, soy-free block cheeses; "Garbanzo Gruyere," "Colby Cheeze" and "Mild White Cheeze." Then we'll transform a humble block of tofu into incredibly rich, cheddar-style "Crock Cheeze." Decadent (but super quick and easy) nachos will lead us into a sampling of ready-to-purchase cheese alternatives from the grocery section. Bon Appetite!
