Easy and So Delicious
With local beets landing on our shelves soon, here's a simple recipe for preparing pickled beets. These are delicious as a side or on salads. These can be made in any size batch that you wish.
Ingredients (in order of use):
Organic Beets, as many as your container will hold
Scrub beets very well. Do not peel. Boil until a fork goes in easily. Drain and rinse in cold water. The skin will pull right off. Cut in small chunks.
In whatever container you choose, pack with beets. Cover with 1/2 water and 1/2 white vinegar. Add salt, pepper, and sugar to taste. Seal and put in refrigerator overnight. Taste again the next day, adjust to taste if necessary. Keep refrigerated and enjoy often.
