Fresh Hand-Cut Bison at the Merc

A Lean Beef Alternative

The Merc is now carrying fresh Merc-Cut bison in the meat & seafood department! We have long dreamed of offering fresh bison cuts for you to enjoy right off our shelves, and we are glad to now have the opportunity.

We have a good selection of hand-cut steaks and freshly ground bison for you to enjoy as a fresh alternative to beef in your fall menus. We offer prime cuts of bison such as the tenderloin filet, Kansas City Strip loin and rib-eye steaks. We also have bison sausages as well as stir-fry and stewing packages as extra options.

Bison has gained recent popularity for its lean, red meat with wonderful health benefits. Bison has about 30% less fat than beef and contains nearly no carbs, but packs a whopping 25 grams of protein per 3 ounce serving. Within this small serving, bison covers nearly all of the essential vitamins including vitamin E, B6 and B12. Because bison have a grass-based diet, it also contains a large amount of minerals that may be missing from commercial-grade meats. Calcium, magnesium, potassium, iron and zinc are just a few of the very beneficial minerals found in significant amounts in this lean meat.

Cooking Tips

Bison is a very lean meat and must be cooked with respect to its composition.  When cooking bison, follow the same treatment that you would give grass-finished beef or pasture-raised lamb: low, slow and rare. Bison lacks fat content to protect it from high heat, so a lower temperature during cooking will help to keep the meat from overcooking. Fat also separates muscle fibers, which makes meat more tender. Because bison does not have this extra fat, it should be served rare or medium rare to preserve the tenderness and flavor of the lean meat.

Bison can still be enjoyed on the grill or under the broiler and makes a great addition to a game day celebration or a backyard barbecue. Use simple ingredients, such as salt, pepper and rosemary with a bit of olive oil on your steak to season before grilling. When the steak is finished top it off with a little scallion truffle butter or red wine and mushroom reduction and enjoy the mellow flavor of quality.
