Co+op Explorers
November 2020
People all over the world have different traditions celebrating the harvest and giving thanks:
The Kadazan Festival - Malaysia
Chuseok Harvest Festival – Korea
Festival of the Yams – Ghana
Erntedankfest – Germany
That’s just to name a few! Some folks don’t celebrate Thanksgiving at all, and that’s okay, too. In the United States, we often celebrate with foods like turkey, squash and beans. Did you know that these foods are deeply connected to the Indigenous people of our country? Whether or not you celebrate Thanksgiving, it is a nice time to reflect on the things that you are thankful for.
November’s Activity:
This Month’s Recipe: Sweet Potato Pancakes
With a little help from parents and guardians, you can make your own pancakes! Follow along step by step!
Vegetable of the Month: Squash
There’s two kinds of squash: summer and winter. Summer squash get eaten early, with the seeds inside and the skin on (zucchini, yellow neck). Winter squash have a hard skin that gets peeled, and the seeds are removed, though you can eat those too (butternut, pumpkins, acorn squash).
Butternut squash originated in South America, and has been eaten for over 5,000 years!
Squash are related to melons and cucumbers - they are all Cucurbits!
The heaviest pumpkin on record is 2,624.6 lbs, grown in Belgium in 2016.
